Mario Lopez Shares ‘Extra Lean Family’ Muffin Recipe [VIDEO]

Actor and host Mario Lopez stopped by the studio Tuesday to chat “On Air with Ryan Seacrest” about his most recent book, Extra Lean Family: Get Lean and Achieve Your Family’s Best Health Ever, and shares with us his healthy muffin recipe as well as how he’d like to have more kids ASAP.

Mario describes Extra Lean Family as, “my last book Extra Lean focused on the individual and this one focuses on the household.” Adding, the book stresses, “what they eat affects those closest to them and the importance of the family dinner.” The author also adds the book includes over 50 recipes all of which are 20 minutes or less!

Speaking of recipes, Mario shares his healthy muffin recipe, which he explains consists of ingredients such as, “apple sauce instead of butter, canola oil –just under a couple hundred calories.”

With rock-solid abs and as the fitness ambassador for the Boys and Girls Club, we appreciate Mario’s advice in that, “I don’t believe in diets [rather] you should be able to eat what you want. You just need to be a little smart about approaching it…you just have to know how to eat it.”

Aside from health talk, Mario also shares, “I want more kids right away. I’m in this mode right now…I think fatherhood is my favorite role so far…I want at least three [kids].” Adding, his girlfriend and baby mama Courtney Mazza is on board too, confessing, “I think we’ve made some headway.”

Banana-Coconut Muffin

(makes 12 muffins)
Ingredients:
¾ cup whole wheat pastry flour
¾ cup all-purpose flour
¼ cup sugar
½ teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon ground cinnamon
½ teaspoon salt

1 cup mashed banana (about 2 bananas)
¼ cup unsweetened applesauce
¼ cup of canola oil
½ cup low fat milk
1 large egg
1 teaspoon vanilla extract
¾ cup chopped walnuts
¼ cup sweetened shredded coconut
Directions:
Preheat oven to 375 degrees. Line a muffin pan with paper liners. In a large bowl combine flours, sugar, baking powder, baking soda, cinnamon, and salt. Make a well in the center of the dry ingredients and add banana, applesauce, canola oil, milk, egg, and vanilla; mix gently to combine. Fold in walnuts and coconut. Using a 1/3-cup measure, scoop batter into muffin pans and bake for 20-25 minutes until puffed and golden.
